I've recently come to knowledge that Robert Cohen has written a book on Ellen White's health message.

I have the book: God's Nutritionist, and really appreciate the "Pearls of Wisdom from Ellen G. White.
Here is information from the Introduction, by Robert Cohen:

"In 1863, Ellen Gould White became one of the spiritual founders and architects of the Seventh-day Adventist (SDA) faith. Believed to be a prophet of God, White was a women of remarkable spiritual gifts. Today, her followers include some 13 million church members. The essence of Ellen G. White's dietary philosophy on physical and spiritual health is presented in this book in the form of 500 divinely inspired "pearls of wisdom." Each "pearl" was gleaned from letters, speeches, articles, and books that were written by White over her 70-year career. Eventually, these writings were edited by the trustees of her estate and compiled in the work Counsels on Diet and Foods, first published in 1938. Long before America's first fad diet book was written, Ellen G. White recognized the harmful effects of meat and dairy products on the human body, and her beliefs were eventually validated through scientific research. Fascinating excerpts from scientific magazines and peer-reviewed journals, verifying White's inspired beliefs, are presented in this book along with each of her 'pearls of wisdom."

Cohen goes on to give a short history of her life and notes that Sis. White dedicated 70 years of life to health reform. Her 1883 advice rings true over 120 years later, "Fresh air, exercise, pure water, and clean, sweet premises, are within the reach of all, with but little expense; but drugs are expensive, both in the outlay of means, and the effect produced upon the system."

Here are some her pearls of wisdom listed in the book:

"Grains, fruits, nuts, and vegetables constitute the diet chosen for us by our Creator. These foods prepared in as simple and natural a manner as possible, are the most healthful and nourishing. They impart a strength, a power of endurance, and a vigor of intellect, that are not afforded by a more complex and stimulating diet." --Ministry of Healing, 1905.

"Meat is not essential for health or strength, else the Lord made a mistake when He provided food for Adam and Eve before their fall. All the elements of nuitrition are contained in the fruits, vegetables, and grains." --Review and Herald, May 8, 1883.

"Overeating has a worse effect upon the system than overworking; the energies of the soul are more effectually prostrated by intemperate eating than by intemperate working." --Testimonies, Vol. 2, 1870.

"Again and again I have been shown that God is bringing His people back to His original design, that is, not to subsist upon the flesh of dead animals. He would have us teach people a better way....If meat is discarded, if the taste is not educated in that direction, if a liking for fruits and grains is encouraged, it will soon be as God in the beginning designed it should be. No meat will be used by His people." --1884 Letter.

"To keep the body in a healthy condition, in order that all parts of the living machinery may act harmoniously, should be study of our life. The children of God cannot glorify Him with sickly bodies or dwarfed minds. Those who indulge in any species of intemperance, either in eating or drinking, waste their physical energies and weaken moral power." --Christian Temperance and Bible Hygiene.
