We can't garden anywhere inside our home on account of our three cats who just love to chew at anything green.

Can anybody shed any light on how to get around that problem?

All they do is chew on the plants? When we had cats, they thought the potting soil was an excellent substitute for the litter box. Maybe they thought they were doing their bit by fertilizing them.

Plant catnip & other species in the catmint family. If the cats build a strong preference for it just keep it well stocked & then try growing whatever else houseplants you wish. If they leave them alone in favor of catnip - problem solved, if not - try spraying your plants with hot pepper spray.
