Having encounters with angels would also give evidence to the authenticity of the Scriptures, would it not?

No. It might not.

One might have an encounter with an angel, who came from Saten, who denied the truth of Scripture.

It is true that you could say that such was told of in the Bible. I am simply not comfortable of any kind of a position where it might be said: Go to Saten's angel for proof of the Bible.

The Bible warns us of this though which cautions us to be on our guard in the same way Christ was on His guard during His 40 day fast in the wilderness as described in Matthew 4 coupled with the warning in the quote below:

What would we do if we didn't have this warning from the Bible itself?

We only have to see what popular culture has done with angels to ask ourselves serious questions. I am becoming convinced that the entire notion of angels are a word picture developed by God to get through the dense heads of humans. For starters, why does an omnipresent God need messengers?

God doesn't need messengers, however, He chooses to use messengers as has been aptly demonstrated in the Bible many, many times.

When you serve a God who is omnipresent and invisible how do you differentiate between Him and a "messenger?"

This question disregards what you believe about God. By His very nature God can materialize before you as a thousand beings without violating any of the laws of the universe.
