I got this recipe from a cookbook with no cover or title page. I have no idea what the name of the book is but it was published sometime in the late 50s or early 60s in California. It uses "Sally's Spread" and other "Sally" brands. I think it may be written by Adventists because they quote EG White. If anyone has any info on the book let me know. The patties are good.
Legume Patties
½ cup washed dry garbanzos (chick peas)
½ cup washed dry lentils
½ cup washed dry barley
Make sure beans and barley are dry. Place beans and barley in blender and grind fine. Place in large bowl and pour 2 cups boiling water over and let stand one half hour. Then add:
2 tablespoons Bragg’s Aminos or Maggi seasoning or Soy Sauce
½ teaspoon salt
½ cup ground sunflower seeds (or favorite nut)
¼ cup fine whole wheat bread crumbs
2 teaspoons onion powder or 1 onion finely diced
2 tablespoon olive oil
½ teaspoon oregano
½ teaspoon thyme
Mix well, then form into patties, and brown on oiled, low temperature fry pan. ( If mixture seems too dry add more water.) Turn after 15 minutes and brown on the other side. Keep lid on fryer while cooking; this way they will not stick and will cook all the way through. Makes 18- 24 patties depending on size.
*Make these when you have time to fry them for the required time. I used pan spray and it worked well. They are quite tasty and reminded me of hamburger. The barley is like little bits of fat that usually is in hamburger. I served them as burgers and also as a main entree with gravy.
